Rolled Oats Pancake

A pancake (or hotcake, flapjack or crêpe) is a flat cake, generally thin and round, prepared from a startch based batter that may contain eggs, milk and butter and cooked on a hot surface often frying with oil or butter. Evidence suggests that pancakes were probably the earliest and most widespread cereal food eaten in prehistoric societies.

INGREDIENTS

Rolled oats
150 g
Eggs
2 Nos
Milk
250 ml
Butter
20 g
Baking powder
1.5 tsp
Sugar / Palm Jaggery
15 g
Vanilla essence
Few drops
Salt
a pinch
Oil
to cook

DIRECTIONS

Dry roast the oats and grind into a fine powder.

Add salt and baking powder to it.

Whisk together eggs, milk, butter and sugar.

Add the oats flour to the above liquid. Add vanilla essence.

Mix gently and not vigorously.

Keep aside for 10 minutes.

Heat a pan. Add very little oil. Pour a ladle of pancake batter gently. Spread a little if needed.

Cook on one side and then flip and cook on the other side as well.

Serve with honey/maple syrup and fruits of your choice.
